- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 tablespoons minced garlic
- 1/2 cup grated Parmesan
Coat potatoes in olive oil and garlic.
Place in a sheet pan and roast at 350 for 15 minutes, stir.
Bake 10 minutes longer and toss in Parmesan, bake until tender.
