Onion Jam

Ingredients

  • 6 slices bacon, cooked and crumbled
  • 4 cups chopped Vidalia onions
  • 2 tablespoons bacon grease
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar

Directions

  • Step 1:

    Caramelize onions in bacon grease over medium heat for 15-20 minutes stirring often.

  • Step 2:

    Remove from heat add remaining ingredients, stirring to combine.

  • Step 3:

    Cool and refrigerate until ready to use.

  • Step 4:

    Serve over cream cheese or as a relish.
