Ingredients
- 1 package kielbasa, fully cooked and sliced into ½ inch rounds
- 1 lb Brussels sprouts, rinsed, trimmed and cut in half
- 1 lb potatoes, rinsed and cut into 1 inch cubes (or whole if using marble potatoes)
- 2 Tbsp extra virgin olive oil
- 1 tsp sea salt
- ½ tsp black pepper
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp dried basil
Directions

Step 1:
Preheat the oven to 425oF.

Step 2:
Add the sliced kielbasa, trimmed and cut Brussels sprouts, and chopped potatoes to a large bowl and drizzle with olive oil.

Step 3:
In a small bowl, stir together the salt, black pepper, onion powder, garlic powder, oregano and basil.

Step 4:
Sprinkle seasonings over kielbasa and vegetables and stir to combine.

Step 5:
Spread kielbasa and vegetables onto a parchment lined baking sheet.

Step 6:
Bake for 25 – 30 minutes, until vegetables are tender.
