Sheet Pan Kielbasa, Potatoes and Brussels Sprouts

Ingredients

  • 1 package kielbasa, fully cooked and sliced into ½ inch rounds
  • 1 lb Brussels sprouts, rinsed, trimmed and cut in half
  • 1 lb potatoes, rinsed and cut into 1 inch cubes (or whole if using marble potatoes)
  • 2 Tbsp extra virgin olive oil
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil

Directions

  • Step 1:

    Preheat the oven to 425oF.

  • Step 2:

    Add the sliced kielbasa, trimmed and cut Brussels sprouts, and chopped potatoes to a large bowl and drizzle with olive oil.

  • Step 3:

    In a small bowl, stir together the salt, black pepper, onion powder, garlic powder, oregano and basil.

  • Step 4:

    Sprinkle seasonings over kielbasa and vegetables and stir to combine.

  • Step 5:

    Spread kielbasa and vegetables onto a parchment lined baking sheet.

  • Step 6:

    Bake for 25 – 30 minutes, until vegetables are tender.
