Ingredients
- 7 ounces smoked sausage, cut in 1/2 inch slices
- 1 teaspoon olive oil
- 1 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1 teaspoon chopped garlic
- 1/2 pound dried split peas, rinsed
- 3 cups low sodium chicken broth
- Salt and pepper to taste
Directions

Step 1:
Heat olive oil in a large pot, add sausage and stir until browned. Remove from pot and set aside.

Add onions, carrots, celery and garlic to pot and cook for about 4 minutes, stirring occasionally.

Stir in peas, broth, salt and pepper and bring to a boil.

Stir in cooked sausage and reduce heat to medium low.

Stirring occasionally, simmer about 45 minutes until peas are tender.
