Ingredients
- 6 large peppers (mix of yellow, orange and red)
- 3 Tbsp olive oil, divided
- ½ lb ground beef
- ½ lb sweet Italian ground sausage
- 2 red onions, diced
- 3 garlic cloves, minced
- 4 Roma tomatoes, diced
- 1 tsp Italian seasoning
- ¼ tsp salt
- 1 cup cooked brown rice
- 2 cups shredded mozzarella cheese, divided
Directions

Step 1:
Preheat oven to 350F.

Step 2:
Cut the tops off the peppers. Remove and discard stems. Scoop out the seeds and as much of the membrane as you can. Set aside.

Step 3:
In a large skillet heat 1 Tbsp olive oil over medium heat. Cook the ground beef and ground sausage until browned completely, about 8 to 10 minutes. Drain the fat.

Step 4:
Wipe out skillet and add the remaining 2 Tbsp olive oil. Over medium heat, cook the diced onion for 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.

Step 5:
Add the diced tomatoes and cook for an additional 3 minutes.

Step 6:
In a large bowl, combine the cooked ground meats, the cooked vegetables, Italian seasoning, salt, cooked brown rice and 1 cup shredded mozzarella.

Step 7:
Once thoroughly combined, spoon mixture into the 6 bell peppers.

Step 8:
Top each of the bell peppers with a sprinkling of the remaining 1 cup of shredded mozzarella cheese.

Step 9:
Pour a small amount of water in the bottom of a baking dish. Place stuffed peppers in baking dish, making sure they remain upright.

Step 10:
Cover with foil and bake for 30 minutes.

Step 11:
Uncover and bake an additional 15 to 20 minutes, until the cheese is melted and lightly browned.
