Syrup Glazed Roasted Vegetables

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter pecan syrup or maple syrup
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1 large sweet potato, cut into bit size pieces
  • 1/2 pound brussels sprouts, cut in half
  • 1 pound pecans

Directions

  • Step 1:

    Preheat oven to 400ยบ.

  • Step 2:

    Combine oil, syrup, thyme and salt.

  • Step 3:

    Toss in potatoes and brussels sprouts.

  • Step 4:

    Place on a shallow pan and roast about 20 minutes.

  • Step 5:

    Toss in pecans, and drizzle with a little more syrup if desired.
