Ingredients
- 2 (1 oz) squares unsweetened chocolate
- 2 cups finely grated zucchini
- 2 cups sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups AP flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- ¾ cup semisweet chocolate chips
- 1 Tbsp orange zest
Directions

Step 1:
Preheat oven to 350 F. Generously grease a 9 x 13 inch baking dish (or two 9x5 inch loaf pans)

Step 2:
Melt chocolate squares in a microwave-safe glass bowl in 15 second intervals, stirring after each interval, about 1 – 3 minutes total.

Step 3:
Grate zucchini to make 2 cups worth. Place grated zucchini between paper towels to help pull the water out.

Step 4:
In a large bowl, add sugar, oil, eggs, vanilla, and drained zucchini and beat with an electric mixer until well combined.

Beat in melted chocolate until well combined.

Step 6:
In a medium bowl, whisk together flour, baking soda, salt and cinnamon.

With a rubber spatula, stir dry ingredients into wet ingredients until just blended.

Step 8:
Fold in chocolate chips and orange zest.

Step 9:
Pour batter into prepared pan(s).

Step 10:
Bake for 30 – 35 minutes if using a 9x13 inch dish or for 60 – 70 minutes if using 2 loaf pans until a toothpick inserted in the center comes out clean.

Cool to room temperature before slicing.
