Sugar Snap Pea and Peach Salad

Ingredients

  • 8 ounces sugar snap peas, cut in 1 inch pieces
  • 1/2 cup chopped pecans
  • 1 cup chopped peaches
  • 1/2 cup crumbled feta
  • 2 1/2 tablespoons olive oil
  • Zest and juice of one lemon
  • 1 teaspoon low sodium soy sauce
  • 1/4-1/2 cup whole mint leaves
  • Pinch cayenne pepper
  • Sea salt and pepper to taste

Directions

    Combine all ingredients in a bowl, cover and chill several hours or overnight.
