Ingredients
- 1 lb carrots
- 2 Tbsp olive oil
- ½ tsp cumin
- ½ tsp paprika
- Kosher salt and black pepper, to taste
- 1/3 cup mayonnaise
- 2 tsp canned chipotle
- Freshly squeezed lime juice from one lime

Step 1:
Preheat oven to 425 F.

Step 2:
Peel carrots and cut them lengthwise in half, then in half again. You may need to cut them in half widthwise if you have long carrots. They should be the size of French fries when done.

Step 3:
In a large bowl, toss carrots with olive oil, cumin and paprika. Salt and pepper to taste.

Step 4:
Spread carrots evenly on a parchment lined baking sheet and bake for 15 – 20 minutes (until desired tenderness).

Step 5:
While carrots are cooking, mix together the mayonnaise, chipotle and lime juice.

Step 6:
Serve carrot fries with dipping sauce.
