Baked Corn Casserole

Ingredients

  • 2 large eggs, beaten
  • 1 ½ cups sour cream
  • 2 cups fresh Georgia corn kernels, uncooked
  • 2 cups shredded Monterey Jack cheese
  • 1 4.5-ounce can chopped green chilies, drained
  • Salt and pepper to taste
  • ½ cup shredded Cheddar cheese

Directions

  • Step 1:

    Preheat oven to 350º.

  • Step 2:

    Combine eggs and sour cream, stirring until well blended. Stir in remaining ingredients except for Cheddar cheese. Pour into a prepared quiche dish or 8” x 8” casserole dish. Top with remaining cheese. Bake uncovered for 35 minutes or until center is done. (Serves 6)
