Blueberry Turkey Burgers with Blueberry Ketchup

Ingredients

  • 1 pound ground turkey
  • 3/4 cup Georgia Blueberries
  • 1 teaspoon ground ginger
  • 1 tablespoon tarragon
  • 1 teaspoon black pepper
  • 2 tablespoons soy sauce
  • 1 1/2 cups blueberries
  • 1/2 cup minced onion
  • 1/4 cup rice wine vinegar
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger

Directions

  • Step 1:

    In a large bowl combine all ingredients except soy sauce, then gently form into 4 patties.

  • Step 2:

    Brush patties with soy sauce before cooking. Grill patties until done.

  • Step 3:

    In a medium saucepan combine ingredients for ketchup (1 1/2 C blueberries through ginger) and simmer, stirring often, for 15 to 20 minutes.

  • Step 4:

    Cool ketchup, then place in blender or food processor and process until smooth.

  • Step 5:

    Serve burgers with sliced red onion on sesame seed buns and Blueberry Ketchup.
