Candied Sweet Potatoes


  • 6 large sweet potatoes (or 12 medium)
  • ½ cup butter
  • 2 cups granulated sugar
  • ½ cup brown sugar
  • ½ cup frozen orange juice concentrate


  • Step 1:

    Peel and cut sweet potatoes into 1-inch cubes.

  • Step 2:

    Melt butter in a large, heavy skillet over medium heat. Add sugar and stir.

  • Step 3:

    Add sweet potatoes and mix well.

  • Step 4:

    Cover skillet, reduce heat to low to medium low and simmer, stirring occasionally, until potatoes are tender. About 1 hour.

  • Step 5:

    Remove sweet potatoes and set aside.

  • Step 6:

    Add brown sugar and frozen orange juice concentrate to the butter/sugar mixture and bring to a boil over medium heat.

  • Step 7:

    Let boil, stirring occasionally, until reduced and syrupy. About 15 minutes.

  • Step 8:

    Return sweet potatoes to pan and stir to coat.
