Ingredients
- 12 oz hot Italian sausage, shaped into 1/2” balls
- 1 small red onion, finely chopped
- 1 jalapeno, finely chopped
- 3 cloves garlic, finely chopped
- ½ tsp kosher salt
- ½ tsp black pepper
- 1 cup BBQ sauce
- 1 (8 oz) block cream cheese, cubed
- ¾ cup shredded American cheese
- ¾ cup shredded sharp cheddar cheese
- ¼ cup pickled red onion, finely chopped, plus more for topping
- ¼ cup whole milk
- 1 bunch green onions, sliced

Step 1:
In a large skillet, over medium heat, cook the sausage meatballs until brown, about 7 to 9 minutes. Transfer meatballs to a plate and set aside. Keep 2 Tbsp of fat in the skillet.

Step 2:
Over medium heat, stir onions, jalapeno, garlic, salt and pepper into the reserved sausage fat. Cook and stir constantly until caramelized, about 3-4 minutes.

Step 3:
Reduce heat to medium low. Add BBQ sauce, cooked meatballs, and cream cheese. Stir until cream cheese is melted and smooth.

Remove from heat and add both shredded cheeses, pickled red onions, and milk. Stir until completely melted and combined.

Step 5:
Garnish with green onions and more pickled red onions.

Serve warm with tortilla or corn chip scoops.
