Cider Braised Kale Bacon and Vidalia Onions

Ingredients

  • 1 kale bunch (washed well, destemmed and chopped)
  • 1 tablespoon pecan or olive oil
  • 3 slices thick-cut bacon (chopped)
  • 1 Vidalia Onion (chopped)
  • 1 cup apple cider
  • Salt & pepper

Directions

  • Step 1:

    Heat pecan oil in skillet.

  • Step 2:

    Add bacon and cook until crisp, then add onion and cook until wilted.

  • Step 3:

    Add kale, apple cider, salt, and pepper. Bring to a boil, then reduce to simmer.

  • Step 4:

    Cover and cook 5-10 minutes, until soft and color changes. Serves 4-6.
