Ingredients
- ¼ cup olive oil
- 3 Tbsp red wine vinegar
- 3 Tbsp fresh lime juice
- 1 tsp sugar
- 4 ears fresh corn, shucked
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red onion, diced
- 2/3 cup fresh mozzarella pearls
- 1 avocado, seeded, peeled and diced
- 2 Tbsp fresh parsley, chopped
- 2 Tbsp fresh basil, chopped
Directions

Step 1:
For the dressing, add the olive oil, red wine vinegar, lime juice and sugar to a medium mixing bowl and whisk to combine. About 2 -3 minutes. Set aside.

Step 2:
Bring a large pot of water to a boil and prepare an ice bath.

Step 3:
Once boiling, add the corn and cook for 3 minutes. Then place the corn in the ice bath to stop the cooking process.

Step 4:
Once cooled, cut the kernels from the cob.

Step 5:
In a large mixing bowl, mix together the corn kernels, cherry tomatoes, cucumber, red onion, mozzarella, avocado, parsley and basil.

Add the dressing and stir to combine.
