Fried Green Tomatoes with Georgia Peach Pepper Sauce

Ingredients

  • 4 large green tomatoes, sliced in 1/4-inch slices
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup buttermilk
  • 2 eggs, beaten
  • 3/4 cup Panko bread crumbs
  • 3/4 cup cornmeal
  • Vegetable oil
  • 1/2 cup red pepper jelly
  • 3/4 cup chopped Georgia Peaches
  • 1 teaspoon Creole mustard
  • 2 teaspoons horseradish

Directions

  • Step 1:

    On a large plate combine flour, salt, pepper and cayenne pepper. In a bowl combine eggs and buttermilk. On another large plate combine Panko and cornmeal.

  • Step 2:

    Dredge tomato slices in flour mixture, then egg mixture, and then gently coat with cornmeal mixture.

  • Step 3:

    Pour about 1/4 inch oil in a large frying pan and heat. Slowly place 4 to 5 tomato slices into hot oil, being careful not to crowd them in the pan. Cook about 2-3 minutes per side, until golden brown.

  • Step 4:

    Place on paper towels to drain.

  • For the Peach Pepper Sauce:

    Combine all ingredients (red pepper jelly through horseradish) in a small saucepan and simmer 5 minutes. Remove from heat and allow to cool to room temperature. Serve with fried green tomatoes. (This sauce is also excellent on pork.)
