Ingredients
- 2 tsp ground coriander
- 1 tsp ground ginger
- 1 Tbsp plus 2 tsp packed brown sugar, divided
- 4 1-inch thick pork loin chops
- 1 tsp kosher salt
- Black pepper to taste
- 6 Tbsp olive oil, divided
- 2 tsp Worcestershire sauce
- 2 Tbsp balsamic vinegar
- 2 cups strawberries, quartered
- 1 5-ounce package mixed greens
- 4 oz log goat cheese, crumbled
- 1/3 cup chopped fresh chives
- 1 cup chopped pecans

Step 1:
Preheat the oven to 350 F.

Step 2:
Combine coriander, ginger, and 1 Tbsp brown sugar in small bowl.

Season the pork chops with ½ tsp salt and a few grinds of pepper and rub with the spice mixture.

Heat a large, oven-safe skillet over medium high heat and drizzle with 2 Tbsp olive oil. Add the pork chops and cook until browned, 1 to 2 minutes per side.

Place the skillet in the oven and roast until the pork is just cooked through and an internal temperature of 145oF is reached (about 10 minutes). Let rest 5 minutes before slicing.

While pork is roasting, whisk the Worcestershire, balsamic vinegar, 2 tsp brown sugar, ½ tsp salt and a pinch of pepper in a large bowl. Whisk in ¼ cup olive oil in a slow, steady stream.

Add strawberries to dressing and toss. Add greens and toss again.

Divide greens onto 4 plates. Top each salad with sliced pork then sprinkle with goat cheese, chives, and pecans.
