- 1 roll sugar cookie dough
- 1 tablespoon lemon zest
- 3-4 lemons, juiced, about 1/2 cup
- 4 eggs
- 1 1/2 cups powdered sugar
- 1/4 cup all purpose flour
Break up cookie dough and press evenly into a parchment lined 9 inch pan, bake dough for 10-15 minutes, allow to cool.
In a large bowl whisk together zest, juice, eggs, sugar and flour.
Pour evenly over partially baked crust, bake at 350 degrees for 20-25 minutes or until set.
Allow to completely cool before cutting into squares. Store in the refrigerator..
