No Bake Strawberry Cheesecake

Ingredients

  • ½ lb fresh strawberries, sliced
  • 2 Tbsp granulated sugar
  • 1 cup heavy whipping cream
  • ½ tsp vanilla extract
  • ½ cup powdered sugar
  • 4 oz cream cheese, room temperature
  • 1 Tbsp lemon juice
  • 2 full sheets graham crackers
  • 1 Tbsp butter, melted
  • 1 ½ tsp brown sugar
  • 4 8-oz wide mouth jars

Directions

  • Step 1:

    Place sliced strawberries in a bowl and add the granulated sugar. Stir to combine. Set aside. Stir occasionally to help draw out the juices.

  • Step 2:

    In a separate bowl, whip the heaving whipping cream with a hand mixer on high speed. When it becomes thick and fluffy (not forming peaks yet), add the vanilla extract and powdered sugar. Mix on low speed until powdered sugar is mixed in, then switch to high speed and whip until stiff peaks are formed.

  • Step 3:

    In another bowl, combine the cream cheese and lemon juice. Use hand mixer to whip the cream cheese and lemon juice together until soft and creamy.

  • Step 4:

    Add the whipped cream to the bowl of whipped cream cheese, then whip the two together until evenly combined.

  • Step 5:

    To make the graham cracker base, crush the graham crackers in a zip top bag, until they are in fine crumbs.

  • Step 6:

    Melt the butter in a small bowl, add the graham cracker crumbs and brown sugar and stir until combined.

  • Step 7:

    Assembly: Divide the graham crackers between 4 jars. Add the cheesecake filling, then top with juiced strawberries (making sure you add a couple spoonfuls of strawberry juice).

  • Step 8:

    Refrigerate until ready to eat.
