Peach Bruschetta

Ingredients

  • 1/2 baguette or French bread, sliced
  • 1 tablespoon olive oil
  • 2-4 peaches chopped
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh basil
  • 4 ounces Mozzarella cheese, chopped
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons olive oil
  • Salt and pepper to taste

Directions

  • Step 1:

    Lightly brush bread with 1 tablespoon olive oil, bake at 350 degrees for 5 minutes until lightly browned.

  • Step 2:

    Combine remaining ingredients and spoon over bread, bake 350 degrees for 10 minutes until cheese is melted.
