Ingredients
- ½ cup butter, melted
- ¾ cup sugar
- 1 ½ cup all-purpose flour
- ¼ tsp salt
- 3 cups salted peanuts
- 1 ½ cups butterscotch or caramel baking chips
- 2 Tbsp butter
- ½ cup corn syrup
- 1 Tbsp water
- 1 tsp cardamon powder (optional)
Directions

Step 1:
Preheat oven to 350 F.

Step 2:
Line a 9 x 13 baking dish with parchment paper.

Step 3:
In a medium bowl, add ½ cup melted butter and sugar and stir until well blended and light in texture.

Add the flour and salt and combine until ingredients are well blended and a dough begins to form.

Step 5:
Press the flour mixture evenly into the bottom of the prepared pan.

Step 6:
Bake for 10 minutes in your preheated oven.

Remove from oven and spread the peanuts evenly over the crust and set aside.

Step 8:
In a small saucepan, add the baking chips, 2 Tbsp butter, corn syrup and water. Heat over medium low heat, stirring constantly, until mixture is completely melted and well combined.

Step 9:
Pour the melted mixture over the peanuts, spreading evenly with a spatula. Don’t worry about covering everything as empty pockets will fill while baking.

Step 10:
Bake mixture for 12 – 14 minutes until bubbly around the edges.

Step 11:
Remove from oven and sprinkle with cardamom, if desired.

Step 12:
Let cool completely before cutting into bars.

Store in an airtight container.
