Pecan Tomato Salad

Ingredients

  • 4-6 tomatoes, cut into bite sized pieces
  • 1 medium cucumber, peeled and sliced
  • 1 cup pecans
  • 1/2 red onion, thinly sliced
  • 4 ounces crumbled feta or goat cheese
  • 2 teaspoons dried oregano
  • 1/2 cup olive oil
  • 3 tablespoons balsamic vinegar
  • Salt and pepper to taste

Directions

  • Step 1:

    n a large bowl combine tomatoes, cucumber, pecans and cheese.

  • Step 2:

    In a small bowl combine remaining ingredients, then pour over tomato mixture

  • Step 3:

    Stir gently to combine

  • Step 4:

    Serve immediately
