Ramekin Baked Eggs

Ingredients

  • 1 tablespoon cooked crumbled bacon, sausage or ham
  • 1 tablespoon chopped tomato
  • 1 tablespoon + 1 teaspoon shredded cheddar cheese
  • 1/4 teaspoon fresh chopped basil
  • 1 egg
  • 1 teaspoon cream
  • Salt and pepper to taste
  • Butter for coating cups

Directions

  • Step 1:

    Preheat oven to 350ยบ.

  • Step 2:

    Coat a 6-ounce ramekin or Pyrex custard cup with cooking spray and spread a little butter around inside of cup. In the bottom of the cup, layer meat, tomato, cheese, and basil. Gently crack 1 egg on top of ingredients, but do not stir. Pour cream over egg and salt and pepper.

  • Step 3:

    Line a baking sheet with a dampened dish towel to prevent cups from slipping. Place desired number of cups on baking sheet and bake for 20 minutes or until bubbly. Serve in the cup.

  • Step 4:

    This recipe is for one 6-ounce cup, so increase your ingredients according to how many you are preparing. You can substitute any meat and vegetable as long as the mixture includes about 3 tablespoons of ingredients.
