Roasted Chicken with Blueberry Sauce

Ingredients

  • Juice of 2 lemons (about 1/4 cup)
  • 4 cloves garlic, crushed
  • 1/2 cup olive oil
  • 1/4 cup fresh oregano
  • Salt & pepper to taste
  • 4 chicken pieces, bone in and skin on
  • 1/2 cup feta cheese crumbles (if desired)

Directions

  • Step 1:

    Combine lemon juice, garlic, oregano, salt and pepper.

  • Step 2:

    Marinate chicken in this mixture, from 6 to 24 hours (depending on time available).

  • Step 3:

    Preheat oven to 400º.

  • Step 4:

    Place an oven-proof skillet on stove over medium heat.

  • Step 5:

    Remove chicken from marinade and discard marinade.

  • Step 6:

    In skillet, cook chicken skin side down for about 4 minutes. Turn chicken over and transfer skillet to oven.

  • Step 7:

    Bake for 25-30 minutes or until enter all temperature reaches 160º.

  • Step 8:

    Remove from oven. If desired, sprinkle with feta cheese crumbles.

  • Step 9:

    Serve with Blueberry Sauce
