Salmon Croquettes

Ingredients

  • 1 14 ounce can salmon, bones and skin removed
  • 2 tablespoons finely sliced celery
  • 2 tablespoons finely diced onion
  • 2 tablespoons finely diced bell pepper
  • 2 tablespoons lemon juice
  • 1/2 teaspoon lemon zest
  • 1 tablespoon Worcester sauce
  • 1 teaspoons Dijon mustard
  • 1 teaspoon soy sauce
  • 1/4 cup mayonnaise
  • 1 egg, beaten
  • 1/2 cup Panko bread crumbs
  • Salt and pepper to taste
  • 2-3 tablespoons if you are frying the croquettes

Directions

  • Step 1:

    In a medium bowl, crumble salmon into small pieces.

  • Step 2:

    Add all ingredients (except if you are using oil for frying), mix well.

  • Step 3:

    Shape into 1/4 cup patties.

  • Step 4:

    Line a rimmed baking sheet with parchment paper, place patties on sheet and bake at 375 degrees for 30 minutes
