Shrimp Kabobs with Peaches

Ingredients

  • Peeled and deveined shrimp (allow about 6 per person)
  • Red and green bell peppers, cut into one-inch pieces
  • 1 small Vidalia onion, cut into one-inch pieces
  • 4-5 Georgia peaches, sliced into one-inch pieces
  • 1/2 cup pineapple juice
  • 2 tablespoons honey
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon pepper

Directions

  • Step 1:

    Place shrimp, peppers and onion in a nonreactive bowl.

  • Step 2:

    In separate bowl combine pineapple juice, honey Sriracha sauce and pepper, then pour over shrimp mixture.

  • Step 3:

    Marinate for 30 minutes.

  • Step 4:

    Alternate shrimp, peppers, onions and peaches on skewers.

  • Step 5:

    Place skewers on preheated grill, and turn several times for about 5 minutes or until shrimp are pink.
