Shrimp Po’boys with Remoulade Sauce

Ingredients

  • 3/4 cup mayonnaise
  • 1 tablespoon Creole mustard
  • 1 1/2 tablespoon sweet pickle relish
  • 1 teaspoon tarragon
  • 1 teaspoon chopped fresh parsley
  • I loaf French bread, sliced horizontally
  • 1 pound cooked shrimp, seasoned to taste
  • Sliced roasted red peppers
  • Sliced dill pickles
  • Shredded lettuce

Directions

  • Step 1:

    For the remoulade sauce... combine mayonnaise, Creole mustard, pickle relish, tarragon and parsley. Refrigerate until ready to use.

  • Step 2:

    Spread remoulade sauce on bread, then top with shrimp, peppers, pickles and lettuce.

  • Step 3:

    Cut into 4 to 6 pieces. Can be served hot or cold.
