Ingredients
- 1 tsp salt
- 12 oz rigatoni noodles
- ¼ cup butter
- ¾ cup panko
- 1 small onion, small chopped
- 1 ½ Tbsp all-purpose flour
- ½ tsp dry mustard
- Pinch of white pepper
- 1 ½ tsp kosher salt
- 2 ¼ cup whole milk
- 1 lb longhorn style Colby cheese, shredded
Directions

Step 1:
Preheat oven to 350 F. Grease a 2 qt casserole dish with butter and set aside.

Step 2:
Bring 2 quarts of water to a boil. Add 1 tsp salt and pasta.

Cook till tender, but firm, and drain.

Step 4:
In a medium saucepan over medium heat, melt ¼ cup butter and add panko. Toss to coat and set aside.

Step 5:
In a clean medium saucepan, melt 3 Tbsp butter, add chopped onion and cook on medium heat for 5 minutes.

With a whisk, blend in the flour, dry mustard, white pepper, and kosher salt.

Slowly stir in milk, while whisking, and cook over medium low heat, until you see steam rising.

Step 8:
Whisk in a small handful of grated cheese. Repeat until all cheese in is the sauce. Continue whisking sauce until all cheese is melted.

Step 9:
Place cooked pasta in prepared baking dish.

Step 10:
Pour cheese sauce over top and mix until well combined.

Step 11:
Top with prepared panko.

Bake 20 – 40 minutes until bubbly.
