Vidalia Onion and Vegetable Pinwheels

Ingredients

  • 16 ounces cream cheese, softened
  • 1 envelope dry ranch dressing mix
  • 1/2 cup coarsely chopped Vidalia onion
  • 1/4 cup coarsely chopped green pepper
  • 1/4 cup coarsely chopped red pepper
  • 4 twelve-inch tortillas, any flavor

Directions

  • Step 1:

    Combine all ingredients except tortillas in a large bowl. Spread evenly on tortillas, and roll up to enclose filling. Wrap in plastic wrap and chill at least 2 hours.

  • Step 2:

    When ready to serve, unwrap and cut off ends. Cut rolls into 1 inch slices. Makes about 36 pinwheels. (Note: Any combination of vegetables or meat will work, as long at it makes about one cup combined.)
